Ingredients
- ½ cup peanut butter
- 2 tbsp coconut flour
- 2 tbsp maple syrup

1 scoop Further Food Vanilla Plant-Based Protein
- ½ tsp vanilla extract
- Pinch of salt
- ¾ cup dark chocolate chips
- 1 tsp coconut oil
Directions
In a bowl, mix peanut butter, coconut flour, maple syrup, protein powder, vanilla extract and salt until a dough forms. If too dry, add a small splash of almond milk. If too sticky, add a bit more coconut flour.
Roll into small egg shapes and place on a parchment-lined plate. Freeze for 15-20 minutes to firm up.
Melt dark chocolate chips with coconut oil in the microwave in 20 second intervals, stirring in beween or melt on double boiler.
Dip each peanut butter egg into the melted chocolate, using a fork to coat evenly. Let excess chocolate drip off, then place back on parchment paper.
Freeze again for at least 30 minutes until chocolate is set.
Optional: Drizzle with extra melted chocolate or sprinkle with flaky sea salt for extra flair!
