How delicious do these pancakes look! These low sugar pancakes are a great healthy alternative to sugar-laden and often refined flour versions. The added collagen helps to provide some protein that will help keep you full longer. You can top with the suggested optional toppings or even add some berries on top or the side to get some added nutritional benefits.
Ingredients
- 1 cup gluten-free all-purpose flour (can substitute regular all-purpose flour)
- 2 teaspoons baking powder
- 1 tablespoon sugar of choice

½ - 1 scoop Further Food Hazelnut Collagen
- 1/2-1 tablespoon cacao powder (depending on how chocolatey you want it!)
- 1 cup milk of choice
- 1 tablespoon coconut oil, melted and cooled (more for frying pan)
- 1 egg
- Optional toppings: Yogurt, cacao powder, cacao nibs, chocolate tahini drizzle.
Directions
Start with all room-temperature ingredients.
To a large bowl, add flour, baking powder, sugar, hazelnut collagen, and cacao powder. Whisk to combine.
Add the room-temperature milk, coconut oil, and egg. Stir until just combined. Do not overmix. (The batter is on the thicker side for fluffy pancakes. Thin as desired.)
Heat a skillet to medium low and add oil.
Once hot, scoop batter onto the pan.
Cook with a lid, for about one to two minutes before flipping, to ensure they cook through.
Top as desired. Pictured toppings: yogurt, cacao powder, cacao nibs, and a chocolate tahini drizzle.
